A Refreshing Fennel Salad Recipe With An Easy Homemade Dressing

My first memories of fennel are growing up in Italy and sitting outside for dinner and my mom bringing a bowl of fennel to snack on in between courses. That’s it…just fennel, no dressing, no salt, nothing fancy and it was one of my favorite things. And STILL is. I decided to take this childhood gem and make a salad out of it! Here is a quick and easy fennel salad recipe with a creamy homemade vinaigrette

I’m going to preface this by saying that you can really create your own salad dreams with this one. Add in as much or as little of the ingredients as you’d like! This is what I love about this salad. It’s incredibly easy but it’s also incredibly customizable as far as which protein to use and how acidic or sweet to make your dressing.

Fennel Salad Recipe

Ingredients:

Arugula
Fennel, diced or sliced (video on how to cut fennel here)
Sliced almonds
Cherry tomatoes, quartered
Parmesan, shaved
Chicken, or protein of choice
Extra virgin olive oil
Balsamic Vinegar
Dijon Mustard
Honey
Lemon juice
Salt
Pepper

Instructions:

1. Cook your protein and let it rest/cool!

2. For the dressing, add extra virgin olive oil, balsamic vinegar, dijon mustard (very little), lemon juice, honey, salt, pepper to a bowl and whisk until well blended. If too acidic, add in more honey. If too sweet, add in more balsamic vinegar.

3. Add arugula, fennel, tomatoes, sliced almonds, and your protein into a bowl.

4. Add in your dressing and stir until everything is fully coated.

5. Top with shaved parmesan cheese.

6. Put a fork in it and ENJOY THAT SALAD BABY!
