A New and Delicious Take On The Classic Gold Rush Cocktail

THIS IS THE START OF MY FALL MINI SERIES!!!! Starting today I’ll be sharing 15 cocktails for October, 15 cocktails for November, and 15 cocktails for December. They will all be fall inspired (think warm fall holiday vibes). The first of this series is a different take on the classic Gold Rush cocktail recipe. I made my own rosemary honey syrup instead of just adding honey and WOW is it delicious. I made a drink similar to this a few months back but without the syrup so this is REVAMPED.

PS if you want a simplified version of this, check out this Bourbon Honey Lemon Rosemary Cocktail.

Here we go!

Ingredients:

  • 2oz bourbon (we used Basil Hayden’s)
  • 1oz lemon juice
  • 1.5oz rosemary honey syrup (read below for instructions on how to make this)
  • Soda water
  • 3 sprigs of rosemary

How to make the rosemary honey syrup:

  • In a small pot, add 2:1 ratio of honey to water, add two sprigs of rosemary and bring to a simmer. Turn off heat and let it cool. Voila!

Instructions:

  1. Combine bourbon, lemon juice, and rosemary honey syrup into your mixing glass (or directly into your drinking glass).
  2. Stir.
  3. Pour over ice.
  4. Top with soda water.
  5. Garnish with rosemary sprig and lemon peel.
  6. EASY PEASY.
  7. DRINK UP.

What I used:

  • These glasses – I use them for a ton of different cocktails! (check out my full roundup of cocktail glasses here, there are some great marg ones)
  • This cocktail mixing glass that is super easy for stirred or shaken cocktails.

Let me know if you try this gold rush cocktail recipe! Believe it or not, I haven’t always been the biggest bourbon drinker but my fiancé is and he has been turning me onto it more and more lately. BIG FAN NOW. How about you?
