I truly forgot how much I love orecchiette. They are so perfect when adding a bunch of different ingredients to your pasta because they are easy to mix and the little pockets just hold in all the goodness of the ingredients. Serves: 2-3
Ingredients:
16oz orecchiette
16oz Italian ground sausage
12oz broccoli florets
4 cloves minced garlic
2 cups grated parmesan
4 tbsp extra virgin olive oil
2 tsp salt
1 and 1/4 tsp red pepper flakes
1 tsp pepper
Instructions:
1. Bring large pot of water to a boil. Add 1/4 tsp red pepper flakes and 1 tsp salt to your water.
2. When water is boiling, put broccoli in and cook for 4 minutes, or until tender and a fork easily goes through the broccoli.
3. Drain out the broccoli with a mesh ladle and set aside. DO NOT THROW AWAY THE BROCCOLI WATER – YOU WILL USE THE SAME WATER TO COOK YOUR PASTA.
4. Throw the pasta into that same boiling water that you just cooked the broccoli in.
5. In large pan, heat 3 tbsp extra virgin olive oil and 4 cloves of minced garlic over medium heat. Throw the sausage in once garlic is starting to brown.
6. Once the sausage is almost fully browned, throw in the broccoli.
7. Add in 1 tsp red pepper (or more if you like it spicy!), 1 tsp salt, and 1 tsp pepper to the sausage. Stir until sausage is cooked through and everything is mixed well.
8. Once pasta is done, throw it into the sausage and broccoli mixture.
9. Turn heat to high, add 1 tbsp extra virgin olive oil and 1.5 cups of parmesan cheese.
10. Toss until cheese is melted.
11. Serve immediately and top with more cheese if it makes your heart happy.
